Pizzoccheri with courgettes and speck (Italian smoked ham)

  • 320 g of Pizzoccheri
  • 120 g of speck
  • 400 g of courgettes 
  • 200 g of mature Asiago cheese
  • 100 g of grana cheese
  • 120 g of butter
  • garlic, pepper, salt and thyme

Preparation method

Remove the heart of the courgettes and cut into sticks about 4 cm long.
Bring to the boil a pan of salted water and put in the Pizzoccheri.After 10 minutes add the courgettes.Cook for 12-15 minutes in total.
In the meantime brown the speck, cut into stick shapes, with garlic and butter.
Drain the Pizzoccheri and courgettes when cooked and add the speck, Asiago cut into small pieces and grated grana, and sprinkle with thyme and pepper to taste.
Serve on hot plates.
